Pumpkin Apple Muffins

Ingredients
  

  • 3/4 cup apple (grated or finely diced)
  • 1 cup canned pumpking (NOT pumpkin pie filling)
  • 1/4 cup maple syrup you can increase this to 1/2 cup if you want sweeter muffins but decrease apple slightly if you do this
  • 1/4 cup melted coconut oil
  • 1 cup whole wheat flour
  • 1/2 cup oat flour easy to make your own - place 1/2 cup plain rolled oats in your blender and blend into a fine powder
  • 1 tsp baking soda
  • 2 tsp pumpkin pie spice you can substitute cinnamon
  • 1/2 tsp salt
  • 1/4 cup mixins or toppings chocolate chips, dried cranberries, pecans - you name it!

Instructions
 

  • Mix all wet ingredients in large bowl
  • Mix all dry ingredients in separate bowl
  • Combine all ingredients (if you are mixing your mix-ins to all muffins you can add them here)
  • Pour into muffin tin or silicone muffin tray sprayed with cooking oil (if adding toppings do it now)
  • Bake at 375 degrees for 18-20 minutes (or until cooked through)
  • Let cool for 10 minutes and enjoy!
