Italian Pasta Salad

Ingredients
  

  • 1 1/2 cups cooked pasta of choice
  • 1/2 cup chopped raw broccoli florets
  • 1/2 cup canned diced tomatoes (drained)
  • 1/4 cup grated parmesan cheese
  • 1/4 cup chopped green olives

Dressing

  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp dijon mustard
  • 1/2 tsp sugar
  • salt and pepper to taste

Instructions
 

  • Cook the pasta according to package directions and let it come to room temperature.
  • Mix in the tomatoes, broccoli and parmesan cheese.
  • Mix the dressing ingredients together separately and then pour over the pasta salad, mixing well until incorporated.
  • Store 3-5 days in the refrigerator in a covered container.
