Either spray with non cooking spray or line a muffin tin with liners.
Mix all ingredients from the oat layer together until well incorporated. You can add a little water if it's not sticking together enough.
Press the oat layer down evenly in the muffin cups (to make 8-10 bites).
Add a teaspoon of almond butter to every oat layer. Spread gently.
Melt the coconut oil and chocolate chips together. Then drizzle an even amount of chocolate on each bite.
Place in the freezer to set for a minimum of two hours, more if desired.
