Chocolate Oatmeal Protein Bites

Ingredients
  

For the oat layer

  • 1 cup rolled oats
  • 1/2 cup protein powder (use serving size on the brand you are using)
  • 1/2 cup shredded coconut (unsweetened)
  • 1/3-1/2 cup maple syrup

For the almond butter layer

  • 1 tsp almond butter (per bite)

For the chocolate layer

  • 1 tbsp coconut oil
  • 1/4 cup chocolate chips

Instructions
 

  • Either spray with non cooking spray or line a muffin tin with liners.
  • Mix all ingredients from the oat layer together until well incorporated. You can add a little water if it's not sticking together enough.
  • Press the oat layer down evenly in the muffin cups (to make 8-10 bites).
  • Add a teaspoon of almond butter to every oat layer. Spread gently.
  • Melt the coconut oil and chocolate chips together. Then drizzle an even amount of chocolate on each bite.
  • Place in the freezer to set for a minimum of two hours, more if desired.
