I love a warm salad.
There is something so filling and satisfying about a warm dish filled with so many veggies that it’s considered a salad!
If you’ve never experimented with lentils before, this is a great dish to make you a lentil fan. They are extremely mild and can take on any flavors you chose to add! They are extremely high in protein and fiber and are a great plant-based way to nourish your body!
I used pre-cooked lentils from our local grocery store the day I made this because that’s what I had on hand, but usually I simply make dried lentils according to the package directions. If it’s your first time making dried lentils, you’ll want to check them regularly to make sure they end up the texture you desire.
Note: I haven’t found the need to pre-soak lentils as many packages instruct so I skip this step FYI!
This recipe makes a perfect lunch and could easily be served as a side dish with your chosen protein for dinner, or with a nice crusty bread to soak up that delicious dressing!
Due to the heartiness of the kale, this is one salad I find keeps in the refrigerator without wilting for up to 3 days. To reheat I warmed it over very low heat on the stovetop in a non-stick pan for just a few minutes.
Give this warm lentil salad and warm your body from the inside out!
Warm Lentil Salad
Ingredients
- 2 cups cooked lentils (I used green lentils here)
- 2 cups raw kale (cut into small pieces)
- 1/3 cup sundried tomatoes in oil (cut into small pieces)
- 1/3 cup pistachios
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar
- 2 tbsp dijon mustard
- 1 tsp salt
Instructions
- Cook the lentils per package directions
- Mix the olive oil, balsamic vinegar, dijon mustard and salt separately in a large salad bowl
- Add the kale to the dressing mixture and massage until well incorporated
- Add the lentils and sundried tomatoes and mix together
- Add the pistachios and serve while the lentils are still warm
