I call them Everyone’s Favorite Pancakes because they truly are!

When I developed the first iteration of this recipes years ago I felt like I had hit the jackpot. I finally found a gluten free pancake option that I loved and could make from ingredients I always had on hand. That recipe because a crowd favorite here at Jessica Valant Pilates UNLIMITED.

Well, it’s even better now!

The base of this pancake recipe is the pancakes themselves. They’ve gotten a little bit of an upgrade since the original version with oats and baking soda involved.

The star of the show this time is the apple topping!

This has a special place in our family as it’s one of the very first things I ever cooked for my husband. It now serves as our backup option when I’ve run out of every other fruit in our house! I am guaranteed to always have some apples and the scent of them cooking on the stove with cinnamon screams holiday and cozy.

These are easy enough to make on a school morning yet fancy enough to serve for a holiday breakfast. I love these pancakes for the kids as well because they are full of protein from the eggs and the almond butter.

You’ll find that you can easily get 12-15 pancakes from this mixture! A serving size for us is usually two with ample toppings, but you can easily have more and know you are feeding yourself lots of nourishing ingredients! Leftovers serve us throughout the week. It’s like the gift that keeps on giving!

Everyone’s Favorite Pancakes With Cooked Apples

Ingredients
  

  • 2 ripe bananas
  • 5 eggs
  • 1/3 cup almond butter (drippy almond butter is best!)
  • 1/2 cup rolled oats
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 2 apples chopped
  • 2 tsp cinnamon
  • 1 tbsp butter

Instructions
 

  • Place the first six ingredients in a blender (bananas through baking soda)
  • Blend on high until liquified
  • Pour onto a medium high pan that has been coated with butter. Cook approximately 2-3 minutes per side or until cooked through.
  • While cooking the pancakes, place the apples, additional cinnamon and butter in a pan heated to medium on the stove. Cook, stirring occasionally, until desired softness.
  • Serve the pancakes with the apple mixture on top, as well as any additional toppings such as syrup, almond butter and toasted almonds.
