I love this salad.

I love it so much that I made a second batch the day after this picture was taken!

Beans are one of the most wholesome plant-based foods out there. They are full of fiber and protein and will keep you nourished and full until the next meal.

When you combine them with crunchy raw peppers, fresh cilantro and citrusy lemon juice, you have one delicious salad that can be used as a meal or a side dish!

I came up with this dish on a whim. I actually intended to make a fresh summer corn salad, but our grocery delivery mistakenly left out the corn! I had to make a side dish for an outdoor potluck that night and needed to make do with what I had on hand.

Beans to the rescue!

I used black beans, garbanzo beans and edamame, but you could easily substitute kidney beans or white northern beans if you have those in your pantry. The edamame is a fun and hearty addition and you can buy them shelled and frozen for easy use anytime!

The other awesome thing about this salad is that it actually gets better the longer it sits, so enjoy it the next day! It’s a food prep dream.

Citrusy Three Bean Salad

Ingredients
  

  • 1 cup shelled edamame
  • 1 can rinsed black beans
  • 1 can rinsed garbanzo beans
  • 1 chopped raw red pepper
  • 1/4 cup chopped cilantro
  • juice of one lime
  • 2 tbsp olive oil
  • 2 tbsp red wine vinegar
  • salt to taste

Instructions
 

  • Mix all ingredients together and enjoy!
